One of 31 Aussies to play in MLB, Huber started his professional career as a catcher in the New York Mets organisation before suffering a knee injury when on the verge of a call up to the majors. He transitioned to an outfielder and made his MLB debut on 21 June, 2005 for the Kansas City Royals, becoming one of the most successful Australian players of this generation. Huber hit .224 in five years in the majors. At the tail end of his professional career, he also spent time playing in Japan's Nippon Professional Baseball for the Hiroshima Toyo Carp and for the Somerset Patriots of the independent Atlantic League. A long-time member of the Australian national team, Huber has also represented Australia on various international baseball stages, joining the Aussies for all three World Baseball Classics so far, along with the 2009 World Baseball Cup.

A mainstay of the baseball scene in his native Victoria for the past 20 years, Huber has played in all four of the Aces Australian Baseball League seasons and this year joins the Melbourne squad for the fifth anniversary year.
